Blessed Blueberry Pancakes
Blueberry Pancakes
- 1 cup sprouted spelt flour or all-purpose flour
- 1 scoop Blessed Protein Blueberry Pie
- 1 1/2 tbsp baking powder
- 1/4 tsp salt
- 1 tbsp maple syrup
- 1 cup almond milk
- 1 flax egg
- 2 handfuls of blueberries
- extra coconut oil to grease the pan
- Coconut yogurt
Method
- Mix the flour, Blessed Protein Blueberry Pie, baking powder, salt, and sweetener in a bowl.
- In a separate bowl, whisk the almond milk, coconut oil, and flax egg together.
- Pour the wet ingredients into the dry and gently fold until combined. Careful not to overmix! Next, gently fold in the blueberries.
- ALet the batter rest for 5 minutes.
- Heat a little coconut oil in a large skillet on medium heat.
- Pour a scoop of the batter into the pan letting cook for 2-3 minutes or until little bubbles start to form.
- Flip and cook until golden. Repeat for the rest of the batter.
- Warm up a handful of blueberries in the microwave for 30 seconds. Squash them until they turn into juice.
- Top pancakes with warm blueberries, blueberry juices, and icing sugar.
