Blueberry Pancakes

  • 1 cup sprouted spelt flour or all-purpose flour
  • 1 scoop Blessed Protein Blueberry Pie
  • 1 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1 tbsp maple syrup
  • 1 cup almond milk 
  • 1 flax egg 
  • 2 handfuls of blueberries
  • extra coconut oil to grease the pan
  • Coconut yogurt

Method

    1. Mix the flour, Blessed Protein Blueberry Pie, baking powder, salt, and sweetener in a bowl. 

    2. In a separate bowl, whisk the almond milk, coconut oil, and flax egg together.

    3. Pour the wet ingredients into the dry and gently fold until combined. Careful not to overmix! Next, gently fold in the blueberries.

    4. ALet the batter rest for 5 minutes. 

    5. Heat a little coconut oil in a large skillet on medium heat.   

    6. Pour a scoop of the batter into the pan letting cook for 2-3 minutes or until little bubbles start to form. 

    7. Flip and cook until golden. Repeat for the rest of the batter.  

    8. Warm up a handful of blueberries in the microwave for 30 seconds. Squash them until they turn into juice.  

    9. Top pancakes with warm blueberries, blueberry juices, and icing sugar.
