Blessed Blueberry Cobbler

  • 1 ¼ cup all-purpose flour
  • 1 scoop of Blessed Protein Blueberry Pie
  • 1 + 1/4 cups sugar, divided
  • 3 cups blueberries, fresh or frozen
  • 1/2 tsp lemon zest
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegan butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup almond milk
  • Coconut oil, melted and cooled


    1. Preheat oven to 400 F.

    2. Spray coconut oil in your baking dish. Set aside.
    3. In a large bowl add blueberries, lemon zest, and 1/4 cup sugar. Mix well and roughly to create some juice with the blueberries.
    4. In a large bowl, combine Blessed Blueberry Pie, flour, baking powder, salt, and remaining sugar. Add vegan butter, almond milk, and vanilla extract
    5. Stir gently until just combined. The batter will be a bit lumpy which is okay!
    6. Pour batter into the prepared dish and spoon the blueberries in a single layer on top of batter... do not stir blueberries in!
    7. Shake the dish gently so the blueberries settle into the batter.
    8. Bake for 35-40 minutes or until the middle is set.
