Blessed Blueberry Banana Bread
- 1 3/4 cups all-purpose flour
- 1 scoop Blessed Protein Blueberry Pie
- 1 cup caster sugar
- 1/4 tsp sea salt
- 3/4 tsp baking soda
- 1 1/2 cups bananas, mashed
- 1/2 cup vegan butter
- 1 tsp vanilla extract
- 1/4 cup almond milk
- 1 tsp apple cider vinegar
- 1/2 cup blueberries, fresh or frozen
Method
- Preheat the oven to 350F. Line a loaf pan with parchment paper or spray oil, set aside.
- In a large mixing bowl, add your dry ingredients, including Blessed Protein Blueberry Pie, and mix well. Add your wet ingredients, except for your blueberries and mix until just combined. br />
- Using a rubber spatula or carefully with a wooden spoon, fold through your blueberries (if you’re using frozen blueberries, it can come out a little streaky). br />
- Pour your batter into the loaf pan and top with extra blueberries.br />
- Bake for 45-50 minutes, or until a skewer comes out just clean. />
